Why speed matters

Most trademark registers reward whoever files first, not whoever used the name first.

In the UK, the EU, and most jurisdictions worldwide, trademark rights are generally granted on a first-to-file basis, not first-to-use. A name you've been operating under for years isn't automatically yours in the eyes of the register. If someone else files for it first, in a class that covers what you do, they can hold the legal right to it, and you can be the one asked to stop using your own name.
